Base

  • 200 g digestive biscuits (or graham crackers)
  • 100 g melted butter

Cheesecake Filling

  • 600 g cream cheese (room temperature)
  • 200 g sugar
  • 3 eggs (room temperature)
  • 200 ml sour cream or heavy cream
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch or flour
  • Zest of 1 lemon (optional)

Strawberry Layer

  • 300โ€“400 g fresh strawberries
  • 80โ€“100 g sugar (to taste)
  • 1 tbsp lemon juice
  • 1 tsp cornstarch + 2 tbsp water

1๏ธโƒฃ Prepare the base

  1. Crush the biscuits finely.
  2. Mix with melted butter.
  3. Press firmly into a lined square or rectangular pan.
  4. Chill in the fridge for 15 minutes.

2๏ธโƒฃ Make the cheesecake filling

  1. Beat cream cheese with sugar until smooth.
  2. Add eggs one by one.
  3. Mix in cream, vanilla, cornstarch, and lemon zest.
  4. Pour over the biscuit base.

3๏ธโƒฃ Bake

  • Bake at 160ยฐC (320ยฐF) for 50โ€“60 minutes
  • Center should be slightly wobbly.
  • Let cool completely, then refrigerate at least 4 hours (overnight best).

4๏ธโƒฃ Strawberry topping

  1. Cook strawberries with sugar and lemon juice over medium heat.
  2. Add cornstarch slurry and simmer until thick and glossy.
  3. Cool slightly, then spread over the cheesecake.
  4. Top with fresh strawberry halves if desired.

  • Slice with a hot knife for clean cuts
