Ingredients
Cod
- 500 g cod fillets (cut into thick strips)
- Salt & black pepper
- ½ tsp paprika
- ½ tsp chili flakes (optional)
- 2 tbsp olive oil
Garlic Butter
- 3 tbsp butter
- 3–4 garlic cloves, finely minced
- 1 tbsp honey (or brown sugar)
- 1 tbsp soy sauce (optional, for umami)
Sweet Chili Lime Sauce
- 3 tbsp sweet chili sauce
- Juice of 1 lime
- 1 tsp lime zest
To Finish
- Fresh parsley or cilantro, chopped
Instructions
- Season the cod: Pat dry. Season both sides with salt, pepper, paprika, and chili flakes.
- Sear: Heat olive oil in a wide pan over medium-high. Add cod strips and sear 2–3 minutes per side until golden. Remove to a plate.
- Garlic butter: Lower heat to medium. Add butter to the pan; once melted, stir in garlic and cook ~30 seconds until fragrant. Add honey and soy sauce.
- Sauce it: Stir in sweet chili sauce, lime juice, and zest. Let bubble gently 1 minute.
- Glaze: Return cod to the pan. Spoon sauce over the fish and cook 1–2 minutes more until glazed and flaky.
- Finish: Sprinkle with fresh herbs. Serve hot.
