Ingredients:

4 cups cooked chicken, cut into cubes
1.5 cups carrots, diced
2 cups peeled potatoes, cut into small cubes
1 cup butter, cubed
1 cup each of frozen peas and corn
1/2 cup chopped onion
1 cup all-purpose flour
1 teaspoon dried thyme
1.5 cups whole milk
3 cups chicken broth
4 sheets of pie crust from the refrigerated section
Salt and pepper to taste

This recipe makes 2 pot pies!

Instructions:

1. Preheat your oven to 425°F (220°C).

2. In a large saucepan, add the potatoes and carrots, and pour enough water to cover them. Bring the water to a boil, then reduce the heat. Cover the saucepan and cook the vegetables for 8-10 minutes or until they are tender. Drain the water before using the vegetables in your recipe.

3. In a large pot, melt the cubed butter over medium heat. Add the diced onions and cook until they become translucent. Stir in the all-purpose flour and dried thyme, and cook for about a minute to form a roux.

4. Gradually pour in the whole milk and chicken broth, until everything is brought to boil. Stir continuously until the sauce thickens.

4. Add the drained carrots and potatoes to the pot.

5. Stir in the frozen peas, corn, and cooked chicken cubes. Season with salt and pepper to taste. Mix everything together until well combined.

6. Remove the pot from the heat and let the filling cool slightly.

7. Get out two 9-inch pie plates. Place one sheet of pie crust to cover the bottom. Pour half the chicken and vegetable filling over the pie crust in each pan. Cover the filling with 1 sheet of pie crust.

8. Seal the edges of each of the pie crust by pressing them together with a fork or your fingers. Trim and flute as necessary. Cut a few slits on the top pie crust to allow steam to escape during baking.

9. Place the pot pies in the preheated oven and bake for approximately 30-35 minutes or until the crust turns golden brown and the filling is bubbly.

Once done, remove the chicken pot pies from the oven and let it cool for a few minutes before serving. Enjoy your delicious homemade chicken pot pie!
