Ingredients:
- 1 lb (450g) of beef or chicken (your choice)
- 1 medium cabbage, chopped
- 2 large tomatoes, chopped
- 1 onion, chopped
- 1 bell pepper, chopped
- 2-3 garlic cloves, minced
- 2 medium potatoes, peeled and diced
- 4 cups (1 liter) beef or chicken broth
- 1 can of diced tomatoes (14.5 oz)
- 1 cup frozen corn (optional)
- 1-2 teaspoons ground cumin (optional)
- Salt and pepper to taste
- 1-2 teaspoons olive oil for sautéing
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté for 3-5 minutes until softened.
- Add the chopped beef or chicken to the pot and cook until browned, stirring occasionally.
- Add the chopped tomatoes, diced potatoes, and cabbage to the pot. Stir well to combine.
- Pour in the beef or chicken broth and the canned diced tomatoes. Stir to mix everything together.
- Season with cumin, salt, and pepper to taste. Bring the mixture to a simmer over medium-high heat.
- Once it’s simmering, reduce the heat to low and let the soup cook for about 30 minutes, or until the potatoes are tender.
- If you’re adding frozen corn, throw it in during the last 10 minutes of cooking.
- Taste and adjust the seasoning if needed, adding more salt or pepper to your liking.
