Ingredients:

  • 1 lb (450g) of beef or chicken (your choice)
  • 1 medium cabbage, chopped
  • 2 large tomatoes, chopped
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2-3 garlic cloves, minced
  • 2 medium potatoes, peeled and diced
  • 4 cups (1 liter) beef or chicken broth
  • 1 can of diced tomatoes (14.5 oz)
  • 1 cup frozen corn (optional)
  • 1-2 teaspoons ground cumin (optional)
  • Salt and pepper to taste
  • 1-2 teaspoons olive oil for sautéing

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté for 3-5 minutes until softened.
  2. Add the chopped beef or chicken to the pot and cook until browned, stirring occasionally.
  3. Add the chopped tomatoes, diced potatoes, and cabbage to the pot. Stir well to combine.
  4. Pour in the beef or chicken broth and the canned diced tomatoes. Stir to mix everything together.
  5. Season with cumin, salt, and pepper to taste. Bring the mixture to a simmer over medium-high heat.
