Ingredients:
- 1 lb (450g) cooked shrimp, peeled & deveined
- 2 medium cucumbers, sliced into half-moons
- ½ cup plain Greek yogurt (or sour cream)
- 2 tbsp mayonnaise
- 2 tbsp fresh dill, chopped (or 1 tsp dried dill)
- 1 tbsp lemon juice
- 1 clove garlic, minced (optional)
- Salt & black pepper, to taste
Instructions:
- Prepare the Shrimp & Cucumbers
- Pat shrimp dry with paper towels.
- Slice cucumbers and place them in a large mixing bowl.
- Make the Creamy Dressing
- In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, dill, garlic, salt, and pepper until smooth.
- Combine
- Add shrimp and cucumbers to the dressing. Toss gently until evenly coated.
- Chill & Serve
- Refrigerate for 20–30 minutes to let the flavors meld.
- Serve chilled as a light lunch, appetizer, or side dish.
