I used to skip breakfast… now I crave it. This creamy, baked blueberry cup is packed with 47g of protein, keeps me full for hours, and tastes like dessert. Easy, nourishing, and perfect for busy mornings!

Ingredients:

  • 1 cup Greek yogurt (high-protein)
  • 1 scoop vanilla protein powder
  • 1 egg
  • 1/4 cup oats (or oat flour)
  • 1/2 cup blueberries (fresh or frozen)
  • 1–2 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat oven to 180°C (350°F). Lightly grease a small oven-safe jar or ramekin.
  2. Mix yogurt, protein powder, egg, oats, baking powder, vanilla, sweetener, and salt until smooth.
  3. Fold in blueberries gently.
  4. Bake for 20–25 minutes, until set and lightly golden on top.
  5. Cool slightly and enjoy warm—or chill overnight for meal prep.
