Blueberry Protein Breakfast Bake 💪🫐
I used to skip breakfast… now I crave it. This creamy, baked blueberry cup is packed with 47g of protein, keeps me full for hours, and tastes like dessert. Easy, nourishing, and perfect for busy mornings!
Ingredients:
- 1 cup Greek yogurt (high-protein)
- 1 scoop vanilla protein powder
- 1 egg
- 1/4 cup oats (or oat flour)
- 1/2 cup blueberries (fresh or frozen)
- 1–2 tbsp honey or maple syrup (optional)
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions:
- Preheat oven to 180°C (350°F). Lightly grease a small oven-safe jar or ramekin.
- Mix yogurt, protein powder, egg, oats, baking powder, vanilla, sweetener, and salt until smooth.
- Fold in blueberries gently.
- Bake for 20–25 minutes, until set and lightly golden on top.
- Cool slightly and enjoy warm—or chill overnight for meal prep.
