Creamy Shrimp & Cucumber Salad 🦐🥒✨

Ingredients:

  • 1 lb (450g) cooked shrimp, peeled & deveined
  • 2 medium cucumbers, sliced into half-moons
  • ½ cup plain Greek yogurt (or sour cream)
  • 2 tbsp mayonnaise
  • 2 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • 1 tbsp lemon juice
  • 1 clove garlic, minced (optional)
  • Salt & black pepper, to taste

Instructions:

  1. Prepare the Shrimp & Cucumbers
    • Pat shrimp dry with paper towels.
    • Slice cucumbers and place them in a large mixing bowl.
  2. Make the Creamy Dressing
    • In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, dill, garlic, salt, and pepper until smooth.
  3. Combine
    • Add shrimp and cucumbers to the dressing. Toss gently until evenly coated.
  4. Chill & Serve
    • Refrigerate for 20–30 minutes to let the flavors meld.
    • Serve chilled as a light lunch, appetizer, or side dish.
