Ingredients:

  • 1 pack of ready-made shortcrust pastry
  • 4 large eggs
  • 1 cup heavy cream
  • Salt and pepper to taste

  • 1/2 cup of cherry tomatoes, halved (optional)
  • 1/2 cup of grated cheese (optional)

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the shortcrust pastry and cut it into circles large enough to fit into a muffin tray.
  3. Gently press the pastry circles into the muffin tray to form the base of each mini quiche.
  4. In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
  5. Add your choice of fillings to each pastry shell (ham, peas, tomatoes, or cheese).
  6. Pour the egg mixture into each quiche until they are about 3/4 full.
  7. Bake for 20-25 minutes, or until the quiches are golden brown and set.
  8. Remove from the oven and let them cool slightly before serving. Garnish with fresh herbs if desired.
