Peach Clafoutis (Baked Peach Custard)

- 3β4 ripe peaches, peeled and sliced
- 3 large eggs
- ΒΎ cup (150 g) sugar (use half for the dish, half for batter)
- 1 cup (240 ml) milk
- Β½ cup (60 g) all-purpose flour
- 1 tsp vanilla extract
- ΒΌ tsp salt
- 1 tbsp butter (for greasing)
- Optional: Β½ tsp cinnamon or lemon zest
- Powdered sugar (for serving)

- Preheat oven to 180Β°C / 350Β°F.
- Butter a baking dish and sprinkle with 2β3 tbsp sugar to coat the bottom and sides.
- Arrange peach slices evenly in the dish.
- In a bowl, whisk eggs and remaining sugar until pale.
- Add flour and salt, whisk smooth.
- Gradually whisk in milk and vanilla (and cinnamon/zest if using).
- Pour batter over the peaches.
- Bake 40β45 minutes, until puffed, golden, and set in the center.
- Cool slightly β it will deflate (thatβs normal).
- Dust with powdered sugar and serve warm or cold.

- You can substitute peaches with apricots, pears, apples, or cherries.
- For a richer version, replace ΒΌ cup milk with cream.
