One of the best sounds a child can hear on a hot summer afternoon is the ice cream truck turning the corner in the neighborhood. I know I remember that sound and feeling as a child. As a working-from-home adult, you’d better believe I don’t run down the street to approach the poor ice cream guy every time I crave a frozen ola. Nobody needs to see my headboard and slippers! 🙂

32 squares of graham crackers
1 large box of chocolate pudding
2 mixes of milk
7 ounces of marshmallow cream
8-ounce container, refrigerated, thawed
4 oz. Soft cream cheese
*How to make S’mores Ice Cream Sandwiches
Place the chocolate pudding and milk in a large mixing bowl and whisk until smooth. Let it stand for 5 minutes.
Line the bottom of a 9″ x 13″ baking dish with foil or parchment paper.
Spread the chocolate pudding evenly in the bottom of the baking dish.
Blend until creamy and well blended.
Add the cooled mixture to the cream cheese mixture.
Spread the mixture over the chocolate layer in the baking dish.
Place the mixture in the freezer for at least 6 hours.
